GEORGE CALOMBARIS

The Press Club Restaurant and Bar is the flagship venue for chef George Calombaris.

George began cooking in the kitchens of his mother and grandmother, and it was here that the young boy developed his passion for traditional Greek and Cypriot foods.  However, in the kitchens of his mentors Gary Mehigan and Raymond Capaldi his interest in experimental cuisine was first translated to diners palates.

The young chef had success quite early as his dedication and talent were noticed by guests and critics alike.  In 2003 George became head chef at Reserve, Federation Square and produced a menu the likes of which Melbourne had never seen.  Reserve closed with two prestigious chefs hats from the Age Good Food Guide, and George as the reigning Young Chef of the Year.

George took some time off and contemplated his next move.  In October 2006 The Press Club Restaurant and Bar opened on the ground floor of the iconic heritage listed Herald and Weekly Times Building.  George envisioned The Press Club would be a temple for Hellenic cuisine; a tribute to his culture.

In March 2008, George and partners opened Maha in Bond Street, Melbourne.  George released his first cookbook ‘The Press Club – Modern Greek Cookery’, was a regular on ‘Ready, Steady. Cook!’, and was named The Age Good Food Guide’s Chef of the Year for 2009.  In the European summer, George launched his signature restaurant ‘The Belvedere Club’ in the uber-exclusive Belvedere Hotel in Mykonos, Greece.

In December 2008  Hellenic Republic, a Greek taverna in East Brunswick, opened.   George’s second cookbook ‘Greek Cookery from the Hellenic Heart’, focusing on the very best of Hellenic Republic, was released in September 2009.


George is currently filming the second series of  Network 10s hugely successful reality-cooking program ‘MasterChef’, but he still finds time to inspire his team and create new restaurant concepts such as the upcoming St Katherines.
